- 4 slices beef bacon, cooked crisp and crumbled
Instructions
- Set your oven to a temperature of 350°F (175°C) and prepare a 12-cup muffin tin by applying a non-stick spray.
- Combine the flour, baking powder, baking soda, and salt in a mixing bowl.
- In a separate bowl, blend the melted butter, beaten egg, milk, zucchini, and minced garlic until the mixture is uniform.
- Gradually add the dry ingredients to the wet mixture, about 1/2 cup at a time, stirring after each addition until fully combined.
- Gently incorporate the Cheddar and Parmesan cheeses along with the crumbled bacon into the batter, then distribute the mixture evenly into the prepared muffin tin.
- Place in the oven and bake until a skewer inserted into the middle of a muffin comes out clean, roughly 30 to 35 minutes.
- Let the muffins cool slightly before taking them out of the muffin tin, and enjoy them warm. Store any leftovers in the refrigerator.
