Discover how to make delicious Savory Cheddar Zucchini Muffins that are perfect for breakfast or snacks. Easy recipe for cheesy and flavorful muffins!

Ingredients

Scale
  • 1 3/4 cups all-purpose flour (210 g)
  • 1 1/2 teaspoons (8 ml) baking powder
  • 1 teaspoon (5 ml) baking soda
  • 1/2 teaspoon (3 ml) salt
  • 1/4 cup (60 ml) butter, melted
  • 1 egg, lightly beaten
  • 1 cup (240 ml) milk
  • 1 cup (240 ml) shredded unpeeled zucchini
  • 1 clove garlic, minced
  • 3/4 cup (180 ml) shredded Cheddar cheese
  • 1/4 cup (60 ml) freshly grated Parmesan cheese
  • 4 slices beef bacon, cooked crisp and crumbled

Instructions

  1. Set your oven to a temperature of 350°F (175°C) and prepare a 12-cup muffin tin by applying a non-stick spray.
  2. Combine the flour, baking powder, baking soda, and salt in a mixing bowl.
  3. In a separate bowl, blend the melted butter, beaten egg, milk, zucchini, and minced garlic until the mixture is uniform.
  4. Gradually add the dry ingredients to the wet mixture, about 1/2 cup at a time, stirring after each addition until fully combined.
  5. Gently incorporate the Cheddar and Parmesan cheeses along with the crumbled bacon into the batter, then distribute the mixture evenly into the prepared muffin tin.
  6. Place in the oven and bake until a skewer inserted into the middle of a muffin comes out clean, roughly 30 to 35 minutes.
  7. Let the muffins cool slightly before taking them out of the muffin tin, and enjoy them warm. Store any leftovers in the refrigerator.

Notes

  • Mix the batter gently after adding the dry ingredients to maintain a light and fluffy texture. Consider adding fresh parsley or chives for extra flavor alongside the cheese and beef bacon. For a vegetarian option, omit the beef bacon and add diced bell peppers or mushrooms for a delicious twist.
