  • 1 Tbsp (15 ml) granulated sugar
  • 2 1/4 tsp (11 ml) rapid rise yeast
  • 1 1/4 tsp (6 ml) salt
  • 1/4 tsp (1 ml) thyme
  • 1 1/2 tsp (8 ml) basil, divided
  • 8 cloves garlic, divided
  • 2 Tbsp (30 ml) olive oil
  • 1/4 C milk, heated to 115°F
  • 1 C plus 2 Tbsp (30 ml) warm water, heated to 115°F
  • 4 Tbsp (60 ml) unsalted butter, melted and divided
  • 68 Tbsp (105 ml) Parmesan cheese

Instructions

  1. In the bowl of a stand mixer, combine the first five dry ingredients along with 2 minced garlic cloves and 1/2 teaspoon of basil.
  2. With the mixer set to low, pour in the olive oil, milk, and warm water.
  3. Gradually increase the speed as necessary, mixing until the dough detaches from the sides and forms a smooth ball.
  4. Place the dough in a large greased bowl, cover it, and let it rise in a warm area until it doubles in size, which should take at least an hour.
  5. Roll the dough out into a rectangle measuring 12×20 inches.
  6. Generously brush 3 tablespoons of the melted butter over it.
  7. Sprinkle the remaining 1 teaspoon of basil, Parmesan cheese, and the other 6 minced garlic cloves on top.
  8. Cut the dough into 6 equal strips, then stack these strips on top of each other.
  9. Further divide them into 6 equal stacks, resulting in 6 stacks with 6 layers each.
  10. Transfer these dough squares into a lightly greased 10-inch loaf pan.
  11. Cover them loosely and let them rise for another 30-60 minutes.
  12. Set the oven to preheat at 350°F.
  13. Before baking, drizzle the remaining 1 tablespoon of melted butter over the top.
  14. Bake for 35 minutes, using foil to cover if it begins to brown too much.
