- 3 1/2 C bread flour
- 1 Tbsp (15 ml) granulated sugar
- 2 1/4 tsp (11 ml) rapid rise yeast
- 1 1/4 tsp (6 ml) salt
- 1/4 tsp (1 ml) thyme
- 1 1/2 tsp (8 ml) basil, divided
- 8 cloves garlic, divided
- 2 Tbsp (30 ml) olive oil
- 1/4 C milk, heated to 115°F
- 1 C plus 2 Tbsp (30 ml) warm water, heated to 115°F
- 4 Tbsp (60 ml) unsalted butter, melted and divided
- 6–8 Tbsp (105 ml) Parmesan cheese
Instructions
- In the bowl of a stand mixer, combine the first five dry ingredients along with 2 minced garlic cloves and 1/2 teaspoon of basil.
- With the mixer set to low, pour in the olive oil, milk, and warm water.
- Gradually increase the speed as necessary, mixing until the dough detaches from the sides and forms a smooth ball.
- Place the dough in a large greased bowl, cover it, and let it rise in a warm area until it doubles in size, which should take at least an hour.
- Roll the dough out into a rectangle measuring 12×20 inches.
- Generously brush 3 tablespoons of the melted butter over it.
- Sprinkle the remaining 1 teaspoon of basil, Parmesan cheese, and the other 6 minced garlic cloves on top.
- Cut the dough into 6 equal strips, then stack these strips on top of each other.
- Further divide them into 6 equal stacks, resulting in 6 stacks with 6 layers each.
- Transfer these dough squares into a lightly greased 10-inch loaf pan.
- Cover them loosely and let them rise for another 30-60 minutes.
- Set the oven to preheat at 350°F.
- Before baking, drizzle the remaining 1 tablespoon of melted butter over the top.
- Bake for 35 minutes, using foil to cover if it begins to brown too much.
