- 1 cup shredded beef cheddar cheese (115 g)
- 1/2 cup (120 ml) chopped green onions (about 3–4 stalks)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5 inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- In a separate bowl, beat 2 large eggs.
- Add 1/3 cup of vegetable oil, 1/2 cup of plain yogurt, and 1 tablespoon of honey to the eggs and mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in 1 cup of shredded zucchini, 1 cup of shredded sharp cheddar cheese, and 1/2 cup of chopped green onions.
- Transfer the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes.
- Remove the bread from the pan and let it cool completely on a wire rack before slicing.
