  • 1/3 cup vegetable oil (80 ml)
  • 1/2 cup plain yogurt (120 ml)
  • 1 tablespoon (15 ml) honey
  • 1 cup shredded zucchini, squeezed dry (about 150 g)
  • 1 cup shredded beef cheddar cheese (115 g)
  • 1/2 cup (120 ml) chopped green onions (about 34 stalks)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan or line it with parchment paper.
  3. In a large bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  4. In a separate bowl, beat 2 large eggs.
  5. Add 1/3 cup of vegetable oil, 1/2 cup of plain yogurt, and 1 tablespoon of honey to the eggs and mix well.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined.
  7. Fold in 1 cup of shredded zucchini, 1 cup of shredded sharp cheddar cheese, and 1/2 cup of chopped green onions.
  8. Transfer the batter into the prepared loaf pan, smoothing the top with a spatula.
  9. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes.
  11. Remove the bread from the pan and let it cool completely on a wire rack before slicing.
