- 8 oz pasta (such as fettuccine or linguine)
- 1 lb skirt steak
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Season the skirt steak with salt and pepper. In a large skillet, heat olive oil over medium-high heat.
- Add the steak and cook for about 4-5 minutes per side until cooked to your desired doneness. Remove from the skillet and let rest.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Add cherry tomatoes and cook until they’re soft, about 3-4 minutes.
- Lower the heat and pour in the heavy cream, stirring to combine. Add grated Parmesan cheese and mix until melted and creamy.
- Slice the skirt steak thinly against the grain.
- Toss pasta into the sauce and mix well.
- Serve pasta topped with sliced skirt steak and garnish with fresh basil.
Notes
For added flavor, consider marinating the skirt steak briefly in olive oil, salt, and herbs before cooking. For a vegetarian version, replace the skirt steak with sautéed vegetables.
