- 2 pounds baby potatoes or Yukon Gold potatoes
- 1 packet Lipton onion soup mix
- 1 cup beef broth or chicken broth
- ¼ cup unsalted butter, cut into small pieces
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Wash the potatoes thoroughly; peel if desired.
- Place the potatoes in the bottom of the slow cooker.
- Sprinkle the Lipton onion soup mix over the potatoes.
- Pour in the beef or chicken broth.
- Dot the top with small pieces of butter.
- Season with salt and pepper, cover, and cook on low for 6-8 hours or high for 3-4 hours.
- Check for tenderness, garnish with parsley, and serve.
Notes
For a creamier texture, consider adding a splash of cream during the last hour of cooking. Adjust cooking times for more or less powerful slow cookers.
