Ingredients

- 4 medium zucchini
- 1 cup ricotta cheese
- ½ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste

Instructions
- Cut zucchini lengthwise and scoop out the center to form boats
- Salt the hollowed boats and let sit for 10 minutes, then pat dry
- Mix ricotta, Parmesan, and seasonings for filling
- Fill each zucchini boat with the cheese mixture
- Bake until tender and easily pierced with a fork
Notes
- Can be prepared up to 24 hours in advance and refrigerated unbaked
- For vegan version, replace ricotta with crumbled tofu, nutritional yeast, and lemon juice
