Ingredients

  • 12 ounces (340 grams) flank or sirloin steak, thinly sliced
  • 8 ounces (225 grams) fettuccine or preferred pasta
  • 1 cup (240 ml) heavy cream
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • ½ cup (50 grams) freshly grated Parmesan cheese
  • ½ cup (120 ml) beef broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pat the steak dry and generously season it with salt and pepper. Slice it about ¼-inch thick and set aside while you prepare the pasta.
  2. Bring a large pot of salted water to a boil and cook the fettuccine until al dente, about 10-12 minutes. Reserve ½ cup of pasta water before draining.
  3. Heat olive oil in a skillet over medium-high heat. Sear the steak slices for 1-2 minutes per side until browned but tender. Remove the steak and keep it warm.
  4. Reduce heat to medium, add butter to the skillet, and once melted, sauté garlic for 30 seconds until fragrant.
  5. Pour in the beef broth and scrape the browned bits from the skillet. Allow the broth to simmer for 2 minutes and reduce slightly.
  6. Lower the heat to medium-low and stir in the heavy cream, bringing it to a gentle simmer. Gradually add the Parmesan cheese, allowing it to melt smoothly. If the sauce is too thick, add the reserved pasta water to reach the desired consistency.
  7. Add the drained pasta and seared steak back to the skillet. Toss gently to coat and warm everything through for 1-2 minutes.
  8. Adjust seasoning with salt and pepper. Finish by sprinkling chopped parsley on top and serve immediately.

Notes

Use a meat thermometer to ensure the steak reaches medium-rare at around 135°F (57°C). Experiment with fresh herbs for added flavor.
