- 12 ounces (340 grams) flank or sirloin steak, thinly sliced
- 8 ounces (225 grams) fettuccine or preferred pasta
- 1 cup (240 ml) heavy cream
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- ½ cup (50 grams) freshly grated Parmesan cheese
- ½ cup (120 ml) beef broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Pat the steak dry and generously season it with salt and pepper. Slice it about ¼-inch thick and set aside while you prepare the pasta.
- Bring a large pot of salted water to a boil and cook the fettuccine until al dente, about 10-12 minutes. Reserve ½ cup of pasta water before draining.
- Heat olive oil in a skillet over medium-high heat. Sear the steak slices for 1-2 minutes per side until browned but tender. Remove the steak and keep it warm.
- Reduce heat to medium, add butter to the skillet, and once melted, sauté garlic for 30 seconds until fragrant.
- Pour in the beef broth and scrape the browned bits from the skillet. Allow the broth to simmer for 2 minutes and reduce slightly.
- Lower the heat to medium-low and stir in the heavy cream, bringing it to a gentle simmer. Gradually add the Parmesan cheese, allowing it to melt smoothly. If the sauce is too thick, add the reserved pasta water to reach the desired consistency.
- Add the drained pasta and seared steak back to the skillet. Toss gently to coat and warm everything through for 1-2 minutes.
- Adjust seasoning with salt and pepper. Finish by sprinkling chopped parsley on top and serve immediately.
Notes
Use a meat thermometer to ensure the steak reaches medium-rare at around 135°F (57°C). Experiment with fresh herbs for added flavor.
