- 1 cup (55g) chopped Swiss chard

- 1/4 cup (25g) grated plant-based cheese
Instructions
- Preheat the oven to 350°F (175°C).
- Grease or line a muffin tin with paper liners.
- In a large bowl, combine the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, black pepper, garlic powder, and onion powder.
- In a separate bowl, whisk together the milk, olive oil, and eggs until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the grated zucchini, chopped Swiss chard, cheddar cheese, and Parmesan cheese.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Remove from oven and let the muffins cool in the tin for 5 minutes.
- Transfer the muffins to a wire rack to cool completely.
