  • 1 cup (100g) grated zucchini
  • 1 cup (55g) chopped Swiss chard
  • 1/2 cup (50g) grated cheddar cheese
  • 1/4 cup (25g) grated plant-based cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease or line a muffin tin with paper liners.
  3. In a large bowl, combine the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, black pepper, garlic powder, and onion powder.
  4. In a separate bowl, whisk together the milk, olive oil, and eggs until well combined.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Fold in the grated zucchini, chopped Swiss chard, cheddar cheese, and Parmesan cheese.
  7. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
