Instructions
- Set your oven to 350°F and coat a 9 x 5 loaf pan with non-stick spray.
- Place the grated zucchini in a paper towel and press to remove some moisture; it doesn’t need to be completely dry, just remove around a tablespoon of liquid.
- In a large mixing bowl, blend together the flour, baking powder, baking soda, and salt.
- In another smaller bowl, stir together the milk and apple cider vinegar until the milk slightly curdles, creating a homemade buttermilk. Then, incorporate the melted oil and the egg.
- Carefully mix the milk concoction into the dry ingredients, ensuring not to over-stir, as this will prevent the bread from rising well.
- Gently fold in the grated zucchini, cheddar cheese, and chopped green onions until just blended.
- Transfer the mixture into the prepared loaf pan and bake for one hour at 350°F.
- The bread is ready when a toothpick inserted in the center comes out clean. Let it cool in the pan for 10 minutes, then carefully transfer it to a wire rack to cool completely.
