  • 1 1/2 cups (150 g) grated sharp cheddar
  • 2 green onions, chopped

Instructions

  1. Set your oven to 350°F and coat a 9 x 5 loaf pan with non-stick spray.
  2. Place the grated zucchini in a paper towel and press to remove some moisture; it doesn’t need to be completely dry, just remove around a tablespoon of liquid.
  3. In a large mixing bowl, blend together the flour, baking powder, baking soda, and salt.
  4. In another smaller bowl, stir together the milk and apple cider vinegar until the milk slightly curdles, creating a homemade buttermilk. Then, incorporate the melted oil and the egg.

  6. Gently fold in the grated zucchini, cheddar cheese, and chopped green onions until just blended.
