Ingredients

  • 1 package jumbo pasta shells
  • 1 pound mixed seafood (shrimp, crab, scallops)
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 cups marinara sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook pasta shells according to package directions until al dente.
  2. Sauté seafood with garlic and olive oil until just opaque.
  3. Mix ricotta, half the mozzarella, Parmesan, eggs, and parsley in a bowl.
  4. Fold in the cooked seafood mixture.
  5. Fill each shell with the seafood-cheese mixture.
  6. Spread marinara sauce in baking dish, arrange shells.
  7. Top with remaining mozzarella.
  8. Bake at 350°F for 25-30 minutes until bubbly.

Notes

  • Can be prepared up to 24 hours in advance.
  • Add 10-15 minutes to baking time if cooking from refrigerated.
  • Can substitute ricotta with cottage cheese or cream cheese/Greek yogurt mix.
