- 1 lemon, juiced
- 1/4 cup (60 ml) chopped fresh parsley (15 grams)
Instructions
- Preheat the oven to 400°F (200°C).
- Place the chicken thighs on a large sheet pan.
- Arrange the sliced zucchinis, red bell pepper, yellow bell pepper, and red onion around the chicken.
- In a small bowl, combine olive oil, dried oregano, ground cumin, paprika, garlic powder, salt, and black pepper.
- Drizzle the olive oil mixture over the chicken and vegetables.
- Toss the vegetables gently to coat them in the oil and spices.
- Squeeze lemon juice over the entire sheet pan.
