- 24 Dynamic Duo potatoes, halved
- 2 red bell peppers, seeded and sliced
- 1 large yellow onion, diced
- 12 cloves garlic, peeled and whole
- 2 tablespoons olive oil
- 2 teaspoons fresh rosemary, minced
- 1 teaspoon dried oregano
- 1 1/2 teaspoons salt
- 1 teaspoon pepper
- Minced parsley (optional for garnish)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss together the halved potatoes, sliced bell peppers, diced onion, whole garlic cloves, olive oil, rosemary, oregano, salt, and pepper until everything is well coated.
- Spread the mixture on a large sheet pan in an even layer.
- Arrange the uncooked sausage links among the vegetables.
- Bake in the preheated oven for 25-30 minutes or until the sausage is cooked through and vegetables are tender.
- Garnish with minced parsley before serving.
Notes
