- 4 large baking potatoes
- 1 pound ground beef or lamb
- 1 cup mixed vegetables (peas, carrots, corn)
- 1 cup beef broth
- 2 cups mashed potatoes
- Salt and pepper to taste
- Olive oil
- Butter (for mashed potatoes)
Instructions
- Preheat the oven to 400°F (200°C). Wash the baking potatoes and poke holes in them with a fork. Rub them with olive oil and sprinkle with salt.
- Place the prepared potatoes in the oven and bake for 45-60 minutes, until tender.
- Meanwhile, brown the ground beef or lamb in a pan over medium heat. Add mixed vegetables and cook until tender.
- Pour the beef broth into the mixture and let it simmer until it thickens slightly. Season with salt and pepper.
- Once the potatoes are baked, slice them open and scoop out some flesh, leaving enough to maintain their structure.
- Fill the hollowed potatoes with the meat and vegetable mixture.
- Top each potato with creamy mashed potatoes.
- Return the filled potatoes to the oven and bake for an additional 15-20 minutes, until heated through and topped golden.
- Serve warm and enjoy!
Notes
For a creamier topping, incorporate additional butter or milk into the mashed potatoes.
