Ingredients

  • 4 large baking potatoes
  • 1 pound ground beef or lamb
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 cup beef broth
  • 2 cups mashed potatoes
  • Salt and pepper to taste
  • Olive oil
  • Butter (for mashed potatoes)

Instructions

  1. Preheat the oven to 400°F (200°C). Wash the baking potatoes and poke holes in them with a fork. Rub them with olive oil and sprinkle with salt.
  2. Place the prepared potatoes in the oven and bake for 45-60 minutes, until tender.
  3. Meanwhile, brown the ground beef or lamb in a pan over medium heat. Add mixed vegetables and cook until tender.
  4. Pour the beef broth into the mixture and let it simmer until it thickens slightly. Season with salt and pepper.
  5. Once the potatoes are baked, slice them open and scoop out some flesh, leaving enough to maintain their structure.
  6. Fill the hollowed potatoes with the meat and vegetable mixture.
  7. Top each potato with creamy mashed potatoes.
  8. Return the filled potatoes to the oven and bake for an additional 15-20 minutes, until heated through and topped golden.
  9. Serve warm and enjoy!

Notes

For a creamier topping, incorporate additional butter or milk into the mashed potatoes.
