  • 2 cups frozen peas, thawed (340 g)
  • 2 tablespoons ketchup (30 ml)
  • 1 tablespoon Worcestershire sauce (15 ml)
  • 2 teaspoons minced garlic (10 g)
  • 1 tablespoon cornstarch (8 g)
  • 1 teaspoon vegetable bouillon granules (5 g)
  • 1/2 cup cold water (120 ml)
  • 1/2 cup plain yogurt (120 ml)
  • 31/2 cups mashed potatoes (prepared with plant-based milk and dairy-free butter) (820 g)
  • 3/4 cup dairy-free shredded cheddar cheese (75 g)

Instructions

  1. In a sizable frying pan, sauté the beef and onion over medium heat until the beef is fully browned, breaking it apart as it cooks. Remove any excess oil or liquid that accumulates.
  2. After that, add the corn, peas, ketchup, Worcestershire sauce, and garlic. Lower the heat to medium-low, cover the pan, and let it cook for about five minutes.
  3. In a small bowl or a measuring jug, mix together the cornstarch, bouillon, and water until the mixture is smooth. Add this mixture to the beef, stirring well. Turn the heat up to medium and bring the mixture to a gentle boil, cooking and stirring occasionally until it thickens, which should take around two minutes. Stir in the yogurt until it’s warmed through, being careful not to let it boil.
  4. Evenly spread the mashed potatoes over the top of the mixture, then sprinkle the cheese on top.
  5. Place a lid on the pan and continue cooking until the potatoes are heated and the cheese has melted.
