- 1 lb shrimp, peeled and deveined
- 1 lb sausage, sliced
- 1/2 cup vegetable oil
- 1/2 cup all-purpose flour
- 1 onion, diced
- 1 bell pepper, diced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 can diced tomatoes
- 2 cups okra, sliced (fresh or frozen)
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- Cooked rice, for serving
- Green onions, for garnish
- Parsley, for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Gradually whisk in the flour to create a roux, stirring constantly until it turns a dark brown color.
- Add the onion, bell pepper, celery, and garlic to the roux. Cook until the vegetables are tender.
- Slowly add the chicken broth, stirring to combine all elements together.
- Stir in the diced tomatoes, okra, shrimp, sausage, Cajun seasoning, salt, and pepper.
- Allow the mixture to simmer for about 30-40 minutes, letting the flavors meld beautifully.
- Serve the gumbo hot over cooked rice. Garnish the bowls with freshly chopped green onions and parsley.
