Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound sausage, sliced (andouille or your choice)
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 2 cups chicken broth
  • 1 cup long-grain rice
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Green onions for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the sausage and cook until browned.
  2. Stir in the onion, bell pepper, celery, and garlic; sauté until vegetables are tender.
  3. Add the diced tomatoes, chicken broth, Cajun seasoning, and rice. Mix well and bring to a boil.
  4. Reduce heat to low, cover, and simmer for about 20 minutes or until rice is cooked.
  5. Stir in the shrimp, cover, and cook for an additional 5 minutes until shrimp are pink and cooked through.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with green onions.

Notes

For added depth, use homemade chicken broth. Adjust Cajun seasoning to taste.
