- 1 pound shrimp, peeled and deveined
- 1 pound sausage, sliced (andouille or your choice)
- 1 onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14 ounces) diced tomatoes
- 2 cups chicken broth
- 1 cup long-grain rice
- 2 teaspoons Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Green onions for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add the sausage and cook until browned.
- Stir in the onion, bell pepper, celery, and garlic; sauté until vegetables are tender.
- Add the diced tomatoes, chicken broth, Cajun seasoning, and rice. Mix well and bring to a boil.
- Reduce heat to low, cover, and simmer for about 20 minutes or until rice is cooked.
- Stir in the shrimp, cover, and cook for an additional 5 minutes until shrimp are pink and cooked through.
- Season with salt and pepper to taste.
- Serve hot, garnished with green onions.
Notes
For added depth, use homemade chicken broth. Adjust Cajun seasoning to taste.
