Description

A refreshing and vibrant shrimp ceviche combining fresh shrimp, zesty lime and lemon juice, and colorful vegetables for a dish that invites everyone to enjoy a taste of the sea.


Ingredients

  • 1 lb raw shrimp (peeled and deveined)
  • 1/4 cup fresh lime juice (about 23 limes)
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1/2 small red onion (finely diced)
  • 3 roma tomatoes (diced)
  • 1 medium avocado (diced)
  • 1 jalapeño (seeds removed and minced)
  • 1/2 cup fresh cilantro (chopped)
  • 1 cup clamato juice
  • Salt and pepper (to taste)

Instructions

  1. Bring a medium pot of water to a rolling boil.
  2. Add the shrimp and boil for 1-2 minutes until cooked through.
  3. Plunge the shrimp into a bowl of ice water to cool down, then drain.
  4. If the shrimp are large, cut them into smaller pieces.
  5. Transfer the shrimp to a glass bowl.
  6. Add the lime juice and lemon juice. Cover and marinate in the fridge for at least 15 minutes.
  7. Once the shrimp are done marinating, add the chopped vegetables and clamato juice. Stir to combine.
  8. Season with salt and pepper to taste.
  9. Serve the shrimp ceviche chilled, ideally with tortilla chips.

Notes

Adjust lime or lemon juice according to your preference for acidity. Taste your marinated shrimp before adding additional seasoning.
