Description
A refreshing and vibrant shrimp ceviche combining fresh shrimp, zesty lime and lemon juice, and colorful vegetables for a dish that invites everyone to enjoy a taste of the sea.
Ingredients

- 1 lb raw shrimp (peeled and deveined)
- 1/4 cup fresh lime juice (about 2–3 limes)
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1/2 small red onion (finely diced)
- 3 roma tomatoes (diced)
- 1 medium avocado (diced)
- 1 jalapeño (seeds removed and minced)
- 1/2 cup fresh cilantro (chopped)
- 1 cup clamato juice
- Salt and pepper (to taste)
Instructions
- Bring a medium pot of water to a rolling boil.
- Add the shrimp and boil for 1-2 minutes until cooked through.
- Plunge the shrimp into a bowl of ice water to cool down, then drain.
- If the shrimp are large, cut them into smaller pieces.
- Transfer the shrimp to a glass bowl.
- Add the lime juice and lemon juice. Cover and marinate in the fridge for at least 15 minutes.
- Once the shrimp are done marinating, add the chopped vegetables and clamato juice. Stir to combine.
- Season with salt and pepper to taste.
- Serve the shrimp ceviche chilled, ideally with tortilla chips.
Notes
Adjust lime or lemon juice according to your preference for acidity. Taste your marinated shrimp before adding additional seasoning.
