  • 450g/1 lbs ground beef
  • 1 onion, medium, chopped
  • 2 ribs celery, diced
  • 1 bell pepper, (red or green), diced
  • 2 cloves garlic, minced
  • 1/4 tsp (1 ml) cayenne
  • 1/2 tsp (3 ml) paprika
  • 1/2 tsp (3 ml) oregano
  • 1/2 tsp (3 ml) thyme
  • 1/2 tsp (3 ml) dried garlic flakes
  • 1 3/4 tsp (9 ml) salt
  • 1/2 tsp (3 ml) pepper
  • 300g/1 1/2 cups rice, any kind, not quick cooking
  • 750ml/3 cups chicken stock
  • 1 bay leaf
  • 450g/1 lbs shrimp
  • 2 green onions, sliced

Instructions

  1. In a large skillet, warm up 1 tablespoon of olive oil and brown the ground beef over medium heat until it’s no longer pink. Shift the beef to one side of the skillet, pour in the remaining tablespoon of oil, and toss in the chopped onion, diced celery, bell pepper, and minced garlic, cooking them for 5 minutes. Incorporate all the listed spices, salt, pepper, and rice, and sauté for 2 minutes, ensuring to stir continuously.
  2. Pour in the chicken stock and add a bay leaf, allowing the mixture to reach a boil. Then, cover the pan with a lid and reduce the heat to low, letting it simmer for 15 minutes. (Remember to stir the rice halfway through the cooking process.)
  3. Remove the lid, and if the rice appears too dry or slightly scorched on the bottom, add a small amount of water (about 1/4 cup). Stir in the shrimp, cover again, and cook for an additional 2 minutes until the shrimp turn pink. Check if the rice is done to your liking. (If not, let it sit covered for 5 minutes off the heat.) Gently fold in the sliced green onions.
