- 2 tbsp. olive oil (30 ml)
- 4 tbsp. vegetable oil (60 g)
- 1/2 whole medium onion, finely diced
- 4 cloves garlic cloves, minced or pressed
- 1 lb (454 g). large shrimp, peeled and deveined
- Juice of 2 lemons
- 1/2 c. apple juice
- Salt and ground black pepper, to taste
- 4 dashes hot sauce, plus more to taste (I used Tabasco)
- 8 oz (227 g). angel hair pasta
- 1/2 c. grated cheddar cheese
- Chopped fresh basil, to taste
- Chopped fresh parsley, to taste
Instructions
- Prepare a pot of water for cooking the pasta and have it on standby.
- Warm the olive oil along with the vegetable oil in a large pan over a medium flame. Add the diced onion and minced garlic, cooking until the onion becomes see-through, about 2 to 3 minutes. Introduce the shrimp, stirring and cooking for a few more minutes. Pour in the lemon juice, followed by the apple juice, seasoning with salt, black pepper, and hot sauce. Stir the mixture and turn the heat down to low.
- Place the angel hair pasta into the pot of boiling water. Cook until it’s just tender or slightly firm to the bite. Drain the pasta, keeping aside 1 to 2 cups of the pasta cooking water.
- Take the skillet off the heat. Combine the pasta with the shrimp mixture, tossing everything together and adding a splash of the reserved pasta water if the dish seems too thick. Check the taste, adjusting salt and pepper if necessary.
- Finish by sprinkling grated cheddar cheese and a mix of chopped basil and parsley on top. Serve right away.
