Ingredients

  • 1 English muffin (150g), cut in half
  • 2 eggs (100g)
  • 24 slices of beef
  • 1/3 cup (80ml) finely shredded cheese
  • 1 tsp (5g) chives, finely chopped
  • Salt and Pepper to taste
  • 1 Tbsp (15ml) vegetable oil to saute

Instructions

  1. Warm a spacious non-stick skillet on medium and add 1 tablespoon of oil.
  2. Position the English muffin halves face-down on one side of the skillet.
  3. On the other side, crack open two eggs, ensuring the yolks are punctured with a spatula.
  4. As the eggs begin to set, season them with salt, pepper, chopped chives, and half of the cheese.
  5. Place the toasted muffin halves, cut side down, over the eggs and gently press down with a spatula.
  6. Turn the sandwich over so the eggs face upwards.
  7. Layer slices of beef on one half of the sandwich and sprinkle additional cheese on top.
  8. Press the halves together to form the sandwich and remove it from the heat.
