- 1 English muffin (150g), cut in half
- 2 eggs (100g)
- 2–4 slices of beef
- 1/3 cup (80ml) finely shredded cheese
- 1 tsp (5g) chives, finely chopped
- Salt and Pepper to taste
- 1 Tbsp (15ml) vegetable oil to saute
Instructions
- Warm a spacious non-stick skillet on medium and add 1 tablespoon of oil.
- Position the English muffin halves face-down on one side of the skillet.
- On the other side, crack open two eggs, ensuring the yolks are punctured with a spatula.
- As the eggs begin to set, season them with salt, pepper, chopped chives, and half of the cheese.
- Place the toasted muffin halves, cut side down, over the eggs and gently press down with a spatula.
- Turn the sandwich over so the eggs face upwards.
- Layer slices of beef on one half of the sandwich and sprinkle additional cheese on top.
- Press the halves together to form the sandwich and remove it from the heat.
