- 2 cups (240g) all-purpose flour
- 1 teaspoon (5ml) baking soda
- 1/2 teaspoon (2.5ml) salt
- 3 to 4 ripe bananas, mashed should be about 1 1/4 cups (300g) (anywhere from 1 to 1 1/2 cups will work)
- 3/4 cup (150g) granulated sugar can use a combination of brown sugar and granulated sugar (see post)
- 2 large eggs
- 6 tablespoons (85g) beef tallow, melted and cooled
- 1/3 cup (80ml) vegetable oil, plain Greek yogurt can be used instead
- 1 teaspoon (5ml) vanilla extract
Instructions
- Set your oven to 350°F. Coat an 8½ x 4½ inch loaf pan with a nonstick spray, or grease and dust it with flour on all surfaces. Alternatively, you can butter the pan and sprinkle it with a mix of sugar or use sugar and cinnamon. Put it aside.
- In a medium-sized bowl, combine the flour, baking soda, and salt by whisking them together.
- In a large bowl, mash the bananas using a potato masher, fork, or mixer. It’s fine if there are a few small lumps.
- Mix in the sugar, eggs, melted beef tallow, vegetable oil, and vanilla extract until well combined.
- Gently fold in the flour mixture, stirring just until everything is incorporated. Pour the batter into the loaf pan and level the top with a spatula.
- Place in the oven and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out mostly clean or with a few crumbs. If the top begins to brown too much, cover it with foil for the final 10 minutes.
- Allow the bread to cool in the pan on a rack for 15 to 20 minutes. Carefully remove the bread from the pan and let it cool on the rack for at least another hour. Slice and serve.

- Swap beef tallow for plain Greek yogurt for a lighter texture.
- Experiment with brown sugar and granulated sugar for a richer flavor.
- Avoid overmixing batter to prevent a tough loaf.
