  • 2 cups (240g) all-purpose flour
  • 1 teaspoon (5ml) baking soda
  • 1/2 teaspoon (2.5ml) salt
  • 3 to 4 ripe bananas, mashed should be about 1 1/4 cups (300g) (anywhere from 1 to 1 1/2 cups will work)
  • 3/4 cup (150g) granulated sugar can use a combination of brown sugar and granulated sugar (see post)
  • 2 large eggs
  • 6 tablespoons (85g) beef tallow, melted and cooled
  • 1/3 cup (80ml) vegetable oil, plain Greek yogurt can be used instead
  • 1 teaspoon (5ml) vanilla extract

Instructions

  1. Set your oven to 350°F. Coat an 8½ x 4½ inch loaf pan with a nonstick spray, or grease and dust it with flour on all surfaces. Alternatively, you can butter the pan and sprinkle it with a mix of sugar or use sugar and cinnamon. Put it aside.
  2. In a medium-sized bowl, combine the flour, baking soda, and salt by whisking them together.
  3. In a large bowl, mash the bananas using a potato masher, fork, or mixer. It’s fine if there are a few small lumps.
  4. Mix in the sugar, eggs, melted beef tallow, vegetable oil, and vanilla extract until well combined.
  5. Gently fold in the flour mixture, stirring just until everything is incorporated. Pour the batter into the loaf pan and level the top with a spatula.
  6. Place in the oven and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out mostly clean or with a few crumbs. If the top begins to brown too much, cover it with foil for the final 10 minutes.
  7. Allow the bread to cool in the pan on a rack for 15 to 20 minutes. Carefully remove the bread from the pan and let it cool on the rack for at least another hour. Slice and serve.
