Description
A comforting and hearty Sloppy Joe casserole made with ground beef, fresh vegetables, rotini pasta, and topped with gooey cheddar cheese.

- 1 pound ground beef
- 1 small onion, diced
- 1 green pepper, diced
- 30 ounces (2 cans) sloppy joe sauce
- 16 ounces rotini, cooked
- 2 cups shredded cheddar cheese, divided
Instructions
- Heat a large pan over medium heat. Add ground beef, diced onion, and green pepper. Cook until the ground beef is no longer pink, and the vegetables are tender. Drain excess grease.
- Pour in the sloppy joe sauce, stirring to combine. Heat until it simmers.
- Add the cooked rotini and stir until evenly coated with the sauce. Mix in 1 to 1 ½ cups of shredded cheddar cheese until melted.
- Top the casserole with the remaining cheese and cook on low heat until melted. Cover the pan to speed up melting.
- Garnish with parsley if desired.
Notes
Customize the sauce with spicy or BBQ varieties. Add extra vegetables for more nutrition.
