Description

A comforting and hearty Sloppy Joe casserole made with ground beef, fresh vegetables, rotini pasta, and topped with gooey cheddar cheese.


Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 green pepper, diced
  • 30 ounces (2 cans) sloppy joe sauce
  • 16 ounces rotini, cooked
  • 2 cups shredded cheddar cheese, divided

Instructions

  1. Heat a large pan over medium heat. Add ground beef, diced onion, and green pepper. Cook until the ground beef is no longer pink, and the vegetables are tender. Drain excess grease.
  2. Pour in the sloppy joe sauce, stirring to combine. Heat until it simmers.
  3. Add the cooked rotini and stir until evenly coated with the sauce. Mix in 1 to 1 ½ cups of shredded cheddar cheese until melted.
  4. Top the casserole with the remaining cheese and cook on low heat until melted. Cover the pan to speed up melting.
  5. Garnish with parsley if desired.

Notes

Customize the sauce with spicy or BBQ varieties. Add extra vegetables for more nutrition.
