Ingredients

- 4 cups sweet corn (fresh or frozen)
- 1 medium onion, diced
- 2 medium potatoes, diced
- 3 cups vegetable broth
- 2 cups heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon thyme (optional)
- Chopped parsley for garnish (optional)
Instructions
- In a slow cooker, combine the sweet corn, diced onion, diced potatoes, vegetable broth, salt, pepper, garlic powder, and thyme if desired.
- Cook on low for 6-8 hours or on high for 3-4 hours until the vegetables are tender.
- Stir in the heavy cream and adjust seasoning to taste.
- Allow everything to heat through for an additional 30 minutes.
- Serve warm, garnished with chopped parsley if desired.
Notes
For a thicker chowder, consider using an immersible blender to purée a portion of the mixture. Adjust seasoning as needed after adding the heavy cream.
