Ingredients

  • 1 medium onion, diced
  • 2 medium potatoes, diced
  • 3 cups vegetable broth
  • 2 cups heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme (optional)
  • Chopped parsley for garnish (optional)

Instructions

  1. In a slow cooker, combine the sweet corn, diced onion, diced potatoes, vegetable broth, salt, pepper, garlic powder, and thyme if desired.
  2. Cook on low for 6-8 hours or on high for 3-4 hours until the vegetables are tender.
  3. Stir in the heavy cream and adjust seasoning to taste.
  4. Allow everything to heat through for an additional 30 minutes.
  5. Serve warm, garnished with chopped parsley if desired.

Notes

For a thicker chowder, consider using an immersible blender to purée a portion of the mixture. Adjust seasoning as needed after adding the heavy cream.
