- 2 chicken breasts
- 2 cans Rotel tomatoes with green chilis
- 2 cans black beans (drained and rinsed)
- 1 can corn
- 32 oz chicken broth
- 1 packet dry ranch seasoning
- 8 slices cooked and crumbled bacon
- 8 oz cream cheese (at room temperature)
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tbsp garlic powder
- Extra cheese for topping
- Fritos for serving
- Hot sauce for serving
Instructions
- Start by placing the chicken breasts at the bottom of the slow cooker.
- Pour in the two cans of Rotel tomatoes with green chilis, layering them on top of the chicken.
- Add the drained and rinsed black beans and the corn, spreading them evenly.
- Pour in the chicken broth, ensuring all ingredients are submerged in liquid.
- Sprinkle the dry ranch seasoning, chili powder, cumin, garlic powder, salt, and pepper over the mixture.
- Cook on low for 6-8 hours or high for 4 hours.
- Halfway through the cooking time, add the cream cheese, allowing it to melt into the chili.
- Once everything has finished cooking, shred the chicken in the pot.
- Stir in the shredded cheddar cheese, allowing it to melt into the dish before serving.
- Serve with optional toppings like extra cheese, Fritos, and hot sauce.
Notes
For a thicker chili, consider reducing the chicken broth slightly. This dish pairs well with cornbread or salad.
