Ingredients

- 1 medium yellow onion, diced
- 4 medium carrots, sliced
- 4 stalks celery, sliced
- 4 cloves garlic, minced
- 8 cups chicken stock or broth (low sodium preferred)
- 2 large boneless, skinless chicken breasts (about 1.5 lbs)
- 2 dried bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 8 ounces egg noodles
- Juice of 1/2 lemon
- 3 tablespoons fresh parsley, finely chopped
Instructions
- Add the diced onions, sliced carrots, and celery to the slow cooker, followed by the minced garlic.
- Pour in the chicken stock or broth, then add the chicken breasts, bay leaves, thyme, and rosemary. Season with salt and pepper.
- Set the slow cooker to low and cook for 6-8 hours.
- Once cooked, remove the chicken breasts and shred or chop them before returning to the soup.
- Add the egg noodles to the slow cooker and stir to combine. Make sure noodles are submerged in the broth.
- Before serving, stir in the lemon juice and parsley.
Notes
For enhanced flavor, consider sautéing the onions, garlic, and carrots before adding them to the slow cooker. Adjust seasoning according to taste while cooking.
