Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 1 cup rice
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. In a slow cooker, combine lemon juice, olive oil, garlic, oregano, thyme, salt, and pepper.
  2. Add the chicken breasts and coat them in the mixture.
  3. Pour the chicken broth over the chicken.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. About 30 minutes before serving, add the rice to the slow cooker.
  6. Once cooked, fluff the rice with a fork and serve the chicken over the rice, garnished with parsley.
