Ingredients

- 4 boneless, skinless chicken breasts
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups chicken broth
- 1 cup rice
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- In a slow cooker, combine lemon juice, olive oil, garlic, oregano, thyme, salt, and pepper.
- Add the chicken breasts and coat them in the mixture.
- Pour the chicken broth over the chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, add the rice to the slow cooker.
- Once cooked, fluff the rice with a fork and serve the chicken over the rice, garnished with parsley.
Notes
Consider adding carrots, bell peppers, or spinach for extra nutrition. Use high-quality chicken broth for better flavor.
