Ingredients

  • 2 pounds baby potatoes
  • 4 cloves garlic, minced
  • 4 tablespoons herb butter
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Boil the baby potatoes in salted water until tender.
  2. Preheat the oven to 400°F (200°C).
  3. Drain the potatoes and let them cool slightly.
  4. Place the potatoes on a baking sheet and smash them flat with a fork or the bottom of a glass.
  5. Brush the smashed potatoes with olive oil, then sprinkle with salt and pepper.
  6. In a small bowl, mix garlic with herb butter, then top each smashed potato with the garlic herb butter.
  7. Roast in the oven for about 20-25 minutes, or until crispy and browned.
  8. Serve hot.
