- 2 pounds baby potatoes
- 4 cloves garlic, minced
- 4 tablespoons herb butter
- Salt, to taste
- Freshly ground black pepper, to taste
- 2 tablespoons olive oil
Instructions
- Boil the baby potatoes in salted water until tender.
- Preheat the oven to 400°F (200°C).
- Drain the potatoes and let them cool slightly.
- Place the potatoes on a baking sheet and smash them flat with a fork or the bottom of a glass.
- Brush the smashed potatoes with olive oil, then sprinkle with salt and pepper.
- In a small bowl, mix garlic with herb butter, then top each smashed potato with the garlic herb butter.
- Roast in the oven for about 20-25 minutes, or until crispy and browned.
- Serve hot.
