  • 3 cups finely shredded cabbage
  • 1/2 cup shredded smoked Gouda (or Havarti/Parmesan)
  • 1 tablespoon minced fresh dill
  • 2 teaspoons chopped fresh thyme
  • 1 teaspoon sea salt
  • 6 tablespoons milk
  • 1/4 cup sour cream
  • 2 eggs
  • 1/2 cup all-purpose flour (or a blend of Einkorn and whole wheat)
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/4 teaspoon sea salt

Instructions

  1. Preheat your oven to 400 degrees. Lightly butter an 8″ cast-iron skillet and set it aside.
  2. In a medium bowl, combine the cabbage, shredded cheese, minced dill, chopped thyme, and sea salt. Mix everything well before adding it to the prepared skillet.
  3. In a small bowl, whisk together the milk, sour cream, and eggs. Stir in the flour, baking powder, baking soda, and additional sea salt, mixing until smooth.
  4. Pour this creamy mixture over the cabbage filling in the skillet. Use a fork to lift the cabbage gently, allowing the batter to distribute evenly throughout the pan.
  5. Bake for about 30 minutes or until the center sets and the top turns golden brown.
  6. Once ready, garnish with fresh dill and thyme for a bright finishing touch.

Notes
