- 3 cups finely shredded cabbage
- 1/2 cup shredded smoked Gouda (or Havarti/Parmesan)
- 1 tablespoon minced fresh dill
- 2 teaspoons chopped fresh thyme
- 1 teaspoon sea salt
- 6 tablespoons milk
- 1/4 cup sour cream
- 2 eggs
- 1/2 cup all-purpose flour (or a blend of Einkorn and whole wheat)
- 1/4 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/4 teaspoon sea salt
Instructions
- Preheat your oven to 400 degrees. Lightly butter an 8″ cast-iron skillet and set it aside.
- In a medium bowl, combine the cabbage, shredded cheese, minced dill, chopped thyme, and sea salt. Mix everything well before adding it to the prepared skillet.
- In a small bowl, whisk together the milk, sour cream, and eggs. Stir in the flour, baking powder, baking soda, and additional sea salt, mixing until smooth.
- Pour this creamy mixture over the cabbage filling in the skillet. Use a fork to lift the cabbage gently, allowing the batter to distribute evenly throughout the pan.
- Bake for about 30 minutes or until the center sets and the top turns golden brown.
- Once ready, garnish with fresh dill and thyme for a bright finishing touch.
Notes
For a stronger flavor profile, consider adding a dash of nutmeg into the egg mixture. You can also add sautéed onions for a deeper flavor.
