- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon dried thyme
Instructions
- Pat the chicken dry with paper towels.
- Drizzle olive oil over the chicken and rub it in to coat thoroughly.
- Mix salt, black pepper, paprika, garlic powder, onion powder, and dried thyme in a bowl.
- Apply the rub evenly over the chicken, including under the skin.
- Preheat the smoker to 225°F.
- Place the chicken inside the smoker and smoke for 3-4 hours, checking for an internal temperature of 165°F.
- Let the chicken rest for 10 minutes before carving.
Notes
Maintain a consistent temperature in your smoker and avoid opening it too often. Consider brining the chicken overnight for enhanced moisture and flavor.
