Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon dried thyme

Instructions

  1. Pat the chicken dry with paper towels.
  2. Drizzle olive oil over the chicken and rub it in to coat thoroughly.
  3. Mix salt, black pepper, paprika, garlic powder, onion powder, and dried thyme in a bowl.
  4. Apply the rub evenly over the chicken, including under the skin.
  5. Preheat the smoker to 225°F.
  6. Place the chicken inside the smoker and smoke for 3-4 hours, checking for an internal temperature of 165°F.
  7. Let the chicken rest for 10 minutes before carving.
