Description

Delicious vegan BBQ jackfruit stuffed sweet potatoes that are perfect for meal prep and can be made in a slow cooker or Instant Pot too!


Ingredients

  • 2 cans young green jackfruit in water or brine
  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup BBQ sauce
  • 2 tablespoons maple syrup
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash the sweet potatoes and prick them several times with a fork. Place on a baking sheet and bake for 45-60 minutes until tender.
  2. While the potatoes are baking, drain and rinse the canned jackfruit. Remove any tough core pieces and pull the jackfruit apart with your fingers or two forks to create a shredded texture.
  3. Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-5 minutes until softened.
  4. Add the minced garlic and cook for another minute until fragrant.
  5. Add the shredded jackfruit, BBQ sauce, maple syrup, smoked paprika, and cumin. Stir to combine and season with salt and pepper.
  6. Reduce heat to low, cover, and simmer for 15-20 minutes, stirring occasionally. If the mixture becomes too dry, add a splash of water.
  7. Once the sweet potatoes are done, cut them open lengthwise and fluff the inside with a fork.
  8. Top each sweet potato with the BBQ jackfruit mixture and serve immediately.

Notes

  • Make sure to rinse the jackfruit well to remove any brine or canned flavor.
  • For a quicker version, you can microwave the sweet potatoes for 8-10 minutes instead of baking.
  • This dish can be made ahead and reheated for meal prep throughout the week.
  • For an Instant Pot version, cook the sweet potatoes on high pressure for 15 minutes with 1 cup of water.
