  • 1/2 cup whole wheat flour (60g)
  • 1/2 cup granulated sugar (100g)
  • 1/4 cup brown sugar, packed (50g)
  • 1 teaspoon baking powder (4g)
  • 1/2 teaspoon baking soda (2g)
  • 1/2 teaspoon salt (3g)
  • 1 teaspoon ground cinnamon (2g)
  • 1/4 teaspoon ground nutmeg (0.5g)
  • 1/2 cup vegetable oil (120ml)
  • 2 large eggs
  • 1 teaspoon vanilla extract (5ml)
  • 1 cup grated zucchini, squeezed dry (about 130g)
  • 1/2 cup grated carrot (about 60g)
  • 1/2 cup plain yogurt (120ml)
  • 1/2 cup semi-sweet chocolate chips (90g)
  • 1/4 cup chopped walnuts (30g)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a muffin tin with paper liners or grease it lightly.
  3. In a large bowl, combine the all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In a separate bowl, whisk together the vegetable oil, eggs, and vanilla extract.
  5. Add the grated zucchini, grated carrot, and yogurt to the wet ingredients. Mix well.
  6. Pour the wet ingredients into the dry ingredients. Stir until just combined.
  7. Gently fold in the chocolate chips and chopped walnuts.
  8. Divide the batter evenly among the prepared muffin cups.
  9. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  10. Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
