- 1 cup all-purpose flour (120g)
- 1/2 cup whole wheat flour (60g)
- 1/2 cup granulated sugar (100g)
- 1/4 cup brown sugar, packed (50g)
- 1 teaspoon baking powder (4g)
- 1/2 teaspoon baking soda (2g)
- 1/2 teaspoon salt (3g)
- 1 teaspoon ground cinnamon (2g)
- 1/4 teaspoon ground nutmeg (0.5g)
- 1/2 cup vegetable oil (120ml)
- 2 large eggs
- 1 teaspoon vanilla extract (5ml)
- 1 cup grated zucchini, squeezed dry (about 130g)
- 1/2 cup grated carrot (about 60g)
- 1/2 cup plain yogurt (120ml)
- 1/2 cup semi-sweet chocolate chips (90g)
- 1/4 cup chopped walnuts (30g)
Instructions
- Preheat the oven to 350°F (175°C).
- Line a muffin tin with paper liners or grease it lightly.
- In a large bowl, combine the all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, whisk together the vegetable oil, eggs, and vanilla extract.
- Add the grated zucchini, grated carrot, and yogurt to the wet ingredients. Mix well.
- Pour the wet ingredients into the dry ingredients. Stir until just combined.
- Gently fold in the chocolate chips and chopped walnuts.
- Divide the batter evenly among the prepared muffin cups.
- Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
