- 1/4 cup brown sugar, for topping (50g)
- 1 teaspoon ground cinnamon, for topping (2g)
Instructions
- Preheat the oven to 350°F (175°C).
- Grease and flour a 9×5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
- In a large bowl, beat the softened butter and 1 cup of granulated sugar until creamy.
- Add the eggs, one at a time, beating well after each addition.
- Mix in the vanilla extract.
- Stir in the mashed bananas and yogurt until well combined.
- Gradually add the dry ingredients to the banana mixture, stirring until just combined.
- Pour the batter into the prepared loaf pan.
- In a small bowl, mix 1/4 cup of granulated sugar and 1 teaspoon of cinnamon.
- Sprinkle the cinnamon-sugar mixture evenly over the batter.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes.
- Remove the bread from the pan and let it cool completely on a wire rack.
- Slice and serve.
