Instructions
- Begin by setting your oven to 350°F and prepare two loaf pans by coating them with oil and dusting with flour, then place them aside.
- In a sizable mixing bowl, thoroughly blend together the oil, eggs, sugar, and vanilla essence until well mixed.
- In another bowl, mix together the flour, cinnamon, allspice, baking soda, baking powder, and salt, using a whisk to ensure they are well combined.
- Gradually add the flour mixture to the wet ingredients, stirring until the batter is smooth and thick. Then, incorporate the zucchini and mix again until evenly distributed.
- In a small bowl, prepare the topping by combining cinnamon and sugar.
- Pour half of the batter evenly into the prepared loaf pans, then sprinkle with half of the cinnamon sugar mixture.
- Add the remaining batter on top, and finish by sprinkling the rest of the cinnamon and sugar mixture over the batter.
- Bake at 350°F for 45 to 50 minutes, or until a knife inserted in the middle comes out clean. Let the bread cool before cutting into slices. Each serving is one slice.
