  • 1 teaspoon (5 ml) cinnamon

Instructions

  1. Begin by setting your oven to 350°F and prepare two loaf pans by coating them with oil and dusting with flour, then place them aside.
  2. In a sizable mixing bowl, thoroughly blend together the oil, eggs, sugar, and vanilla essence until well mixed.
  3. In another bowl, mix together the flour, cinnamon, allspice, baking soda, baking powder, and salt, using a whisk to ensure they are well combined.
  4. Gradually add the flour mixture to the wet ingredients, stirring until the batter is smooth and thick. Then, incorporate the zucchini and mix again until evenly distributed.
  5. In a small bowl, prepare the topping by combining cinnamon and sugar.
  6. Pour half of the batter evenly into the prepared loaf pans, then sprinkle with half of the cinnamon sugar mixture.
