- 1/2 cup (1 stick) unsalted butter, room temperature (113 g)
- 1 cup packed light brown sugar (200 g)
- 1 large egg, room temperature (56 g (2 oz))
- 1 1/2 tsp vanilla extract or vanilla bean paste (6 g)
- 1/2 tsp fine salt (3 g)
- 1 cup all-purpose flour (125 g)
- 1 cup mashed overripe banana – about 2 large bananas (250 g)
- 3/4 cup chocolate chips, chopped (125 g)
Instructions
- Heat your oven to 350°F (175°C). Prepare an 8×8-inch baking pan by lining it with parchment paper and applying a thin layer of cooking spray. Put it aside for later use.
- In a large mixing bowl or the bowl of a stand mixer, beat together the butter and brown sugar until the mixture is light and fluffy, which should take about 2 minutes on medium-high speed. You can also do this by hand using a whisk, ensuring the butter is very soft.
- Incorporate the egg, vanilla extract, and salt into the mixture. Blend on a medium-low speed until everything is well combined, making sure to scrape down the sides and bottom of the bowl with a rubber spatula as needed.
- Stir in the flour on a low speed until just mixed in.
- Gently fold the mashed banana into the mixture until it’s completely blended.
- Next, carefully fold in the chocolate chips, reserving a few pieces to sprinkle over the top of the batter before baking.
- Transfer the batter into the prepared baking dish and scatter the reserved chocolate pieces over the surface.
- Place in the oven and bake for 33-37 minutes, or until the edges are golden and the center is set, rotating the pan halfway through to ensure even baking.
- Take the pan out of the oven and place it on a wire rack to cool. Allow the bars to cool completely in the pan. Once cooled, carefully lift them out and cut into 16 squares with a sharp, warm knife, wiping the blade clean with a paper towel after each cut.
- Store these bars at room temperature for a few days, or wrap them in plastic or place them in an airtight container in the refrigerator for up to a week.
