Ingredients
Scale
- 1 ½ cups all-purpose flour
- 1 teaspoon (5 ml) baking soda
- 1 teaspoon (5 ml) baking powder
- ½ teaspoon sea salt
- 3 bananas, ripe, mashed, about 1 ½ cups
- ½ cup granulated sugar
- ¼ cup vegetable oil
- 1 egg
- 1 teaspoon (5 ml) vanilla extract
- ½ cup low-fat buttermilk
Instructions
- Warm up your oven to 350°F (175°C) and place paper liners in a muffin tray.
- In a medium bowl, combine the all-purpose flour, baking soda, baking powder, and sea salt by whisking them together. Put this aside for later.
- In a larger bowl, use a fork to mash the ripe bananas until they are smooth.
- To the mashed bananas, add the granulated sugar, vegetable oil, egg, and vanilla extract. Stir the mixture thoroughly until everything is well-blended.
- Gradually incorporate the dry ingredients into the banana mixture, being careful not to overmix.
- Distribute the batter into the lined muffin tray, filling each section about three-quarters full.
- Place in the heated oven and bake for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin bar comes out clean.
- After baking, take the muffin bars out of the oven and let them cool in the tray for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Use ripe bananas for natural sweetness and a smoother texture in the muffins.
- Low-fat buttermilk adds moisture and a subtle tang to the batter, enhancing the overall flavor.
- Avoid overmixing the batter to prevent tough muffins – a few lumps are fine for a tender crumb.
