Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 teaspoon (5 ml) baking soda
  • 1 teaspoon (5 ml) baking powder
  • ½ teaspoon sea salt
  • 3 bananas, ripe, mashed, about 1 ½ cups
  • ½ cup granulated sugar
  • ¼ cup vegetable oil
  • 1 egg
  • 1 teaspoon (5 ml) vanilla extract
  • ½ cup low-fat buttermilk

Instructions

  1. Warm up your oven to 350°F (175°C) and place paper liners in a muffin tray.
  2. In a medium bowl, combine the all-purpose flour, baking soda, baking powder, and sea salt by whisking them together. Put this aside for later.
  3. In a larger bowl, use a fork to mash the ripe bananas until they are smooth.
  4. To the mashed bananas, add the granulated sugar, vegetable oil, egg, and vanilla extract. Stir the mixture thoroughly until everything is well-blended.
  5. Gradually incorporate the dry ingredients into the banana mixture, being careful not to overmix.
  6. Distribute the batter into the lined muffin tray, filling each section about three-quarters full.
  7. Place in the heated oven and bake for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin bar comes out clean.
  8. After baking, take the muffin bars out of the oven and let them cool in the tray for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Use ripe bananas for natural sweetness and a smoother texture in the muffins.
  • Low-fat buttermilk adds moisture and a subtle tang to the batter, enhancing the overall flavor.
  • Avoid overmixing the batter to prevent tough muffins – a few lumps are fine for a tender crumb.
