  • 130 g (1 cup + 2 Tablespoon s) Cake flour
  • 20 g (4 teaspoon s) Milk
  • 40 g (2 2/3 Tablespoon s) Oil
  • 1/4 teaspoon (1 ml) Vanilla extract Optional

Instructions

  1. Set your oven to a temperature of 355ºF (180ºC) to preheat.
  2. Prepare a pot of hot, gently simmering water to warm the eggs.
  3. Line a baking pan with cake liners, or alternatively, coat it with a thin layer of butter, sprinkle with flour, and shake off the excess.
  4. Pass the cake flour through a sifter to remove lumps.
  5. Mix the milk, oil, and vanilla extract together in advance.
  6. Use the water bath to warm the eggs and sugar, stirring continuously until the mixture feels comfortably warm, similar to a bath.
  7. Beat the eggs and sugar on high speed until the mixture becomes very fluffy, then reduce to low speed to refine the texture and achieve a glossy appearance.
  8. Gently fold in the sifted cake flour until no traces of flour remain visible.
  9. Incorporate the milk and oil mixture by folding until the batter is smooth and everything is well combined.
  10. Immediately transfer the batter into the prepared baking pans and bake at 355ºF (180ºC) until the center of the cakes springs back lightly when touched. This should take 25-30 minutes for two 6-inch pans or 30-35 minutes for one 8-inch pan. Adjust the baking time and temperature based on your oven and batter thickness.
  11. Once removed from the oven, invert the cake and allow it to cool completely before cutting.
