- 1 cup (240 ml) very overripe mashed banana*
- 1 cup (240 ml) natural salted peanut butter
- 2 large eggs
- 3 tbsp (45 ml) pure maple syrup
- 1 tsp (5 ml) vanilla extract
- 1 tsp (5 ml) cinnamon
- 3/4 tsp (4 ml) nutmeg
- 1/4 tsp (1 ml) baking soda
- 1/4 tsp (1 ml) fine sea salt
- 1/3 cup (80 ml) chocolate chips, plus a sprinkle for topping
Instructions
- Set your oven to 350°F and prepare an 8×8 inch baking pan by lining it with parchment paper.
- In a bowl, mash bananas with a fork until smooth, ensuring you have one cup.
- Combine the mashed bananas with peanut butter, eggs, maple syrup, vanilla, cinnamon, nutmeg, baking soda, and salt. Whisk the mixture until it is completely smooth.
- Mix in the chocolate chips. Transfer the batter to the prepared baking pan and sprinkle additional chocolate chips on top if desired.
- Bake the mixture for 25 minutes. Allow it to cool, then cut into pieces and enjoy! These are fantastic with a topping of my Healthy Peanut Butter Cream Cheese Frosting.
