- 1/2 cup (120 ml) shredded peeled zucchini
- 1/2 tsp (2.5 ml) kosher salt
- 2 cups (240 g) all-purpose flour
- 2 tsp (10 ml) baking powder
- 1/2 tsp (2.5 ml) baking soda
- 8 tbsp (120 g) unsalted butter, cut into 1/2 inch cubes
- 1 cup (120 g) shredded beef
- 1 tbsp (15 ml) chopped fresh parsley
- 1 tbsp (15 ml) chopped fresh chives
- 3/4 cup (180 ml) buttermilk
Instructions
- Set your oven to 450°F to preheat.
- Combine the shredded zucchini with salt and let it sit for a while.
- In a food processor, blend the flour, baking powder, and baking soda. Add the butter and process until the texture resembles coarse cornmeal, ensuring there are no large butter pieces, about 6 quick pulses. Incorporate the shredded beef and fresh herbs, and pulse a couple of times to mix.
- Pour in the buttermilk and pulse a few more times until the dough starts to form clumps. Transfer the dough to a large mixing bowl.
- Wrap the zucchini in a cloth or paper towel and squeeze out all the moisture. Once fully drained, add it to the dough, fold it in, and shape the dough into a rough ball.
- Separate the dough into 12 equal parts and gently shape them into balls. Arrange the biscuits on baking sheets, with 6 on each sheet. Bake for 10 minutes.
