- 4 tablespoons softened unsalted butter
- ⅓ cup packed brown sugar
- 1½ tablespoons all-purpose flour
- 2½ teaspoons ground cinnamon
- Pinch of salt
- 1 cup unsalted butter (softened but cool)
- 1⅓ cups granulated sugar
- 1¾ teaspoons pure vanilla extract
- 1 large egg
- 1 large egg yolk
- 2¾ cups all-purpose flour
- ¾ teaspoon baking powder
- 1 teaspoon cornstarch
- ¼ teaspoon salt
Instructions
- In a mixing bowl, combine 4 tablespoons of softened unsalted butter, ⅓ cup packed brown sugar, 1½ tablespoons of all-purpose flour, 2½ teaspoons of ground cinnamon, and a pinch of salt. Mix until smooth.
- In a large bowl, cream together 1 cup of unsalted butter (softened but cool) with 1⅓ cups of granulated sugar until light and fluffy.
- Add in 1¾ teaspoons of pure vanilla extract, 1 large egg, and 1 large egg yolk. Mix until fully incorporated.
- In another bowl, combine 2¾ cups of all-purpose flour, ¾ teaspoon baking powder, 1 teaspoon cornstarch, and ¼ teaspoon salt. Gradually add to the butter-sugar mixture and mix until just combined.
- Spread the cinnamon mixture prepared earlier evenly over the cookie dough, roll up tightly, and slice into rounds.
- Place cookies on prepared baking sheets and bake in a preheated oven until lightly golden.
Notes
For an extra layer of flavor, try adding nutmeg or chocolate chips. Store in an airtight container to maintain softness.
