  • 1 tsp (5 ml) vanilla extract or essence
  • 75 grams or 2/3 cup (160 ml) all purpose flour

Instructions

  1. Gently melt the dark chocolate and unsalted butter together using a double boiler or microwave, stirring until they are combined smoothly. Allow to cool to room temperature.
  2. Using a whisk or an electric mixer, vigorously mix the granulated sugar and eggs for several minutes.
  3. Once the mixture has tripled in size, incorporate the vanilla extract by mixing it in thoroughly.
  4. Combine the cooled chocolate-butter mixture with the egg-sugar blend, stirring until the texture is uniform.
  5. Gradually add the all-purpose flour, mixing until it is fully integrated into the batter.
  6. Place the prepared batter in the refrigerator to chill for at least an hour or up to a full day.
  7. Set your oven to 200°C (400°F) and prepare your muffin tray by lining it with paper liners. Fill each liner to about three-quarters full with the batter.
  8. Bake in the center of the oven at 200°C (400°F) for 15-20 minutes. For a softer center, aim for 18 minutes; for a firmer center, bake for 20-22 minutes. The tops should be firm, cracked, and stable, not wobbly. Be cautious not to overbake! Allow to cool on a wire rack, though serving them warm is also delightful.
