- 1 teaspoon (5 ml) vanilla extract (5 milliliters)
- 1/2 cup (120 ml) coconut milk (120 milliliters)
- 1 tablespoon (15 ml) vegetable oil (15 milliliters)
Instructions
- In a large mixing bowl, combine rice flour, sugar, baking powder, and salt.
- Stir the dry ingredients until well mixed.
- In a separate bowl, mix water, coconut milk, vanilla extract, and vegetable oil.
- Gradually add the wet mixture to the dry ingredients.
- Stir the batter until smooth and free of lumps.
- Prepare a steamer and bring water to a boil.
- Grease a round cake pan with a little vegetable oil.
- Pour the batter into the greased cake pan evenly.
- Place the cake pan in the steamer.
- Cover the steamer with a lid wrapped in a clean towel to catch condensation.
- Steam the cake over medium-high heat for about 30 minutes.
- Check doneness by inserting a toothpick; it should come out clean.
- Remove the cake from the steamer and let it cool slightly.
- Once cooled, remove the cake from the pan.
- Slice and serve the rice cake warm.
Notes
- For a more decadent flavor, swap coconut milk with full-fat milk.
- Enhance the fragrance by steeping pandan leaves in the coconut milk before adding it to the batter.
