  • 1 teaspoon (5 ml) vanilla extract (5 milliliters)
  • 1/2 cup (120 ml) coconut milk (120 milliliters)
  • 1 tablespoon (15 ml) vegetable oil (15 milliliters)

Instructions

  1. In a large mixing bowl, combine rice flour, sugar, baking powder, and salt.
  2. Stir the dry ingredients until well mixed.
  3. In a separate bowl, mix water, coconut milk, vanilla extract, and vegetable oil.
  4. Gradually add the wet mixture to the dry ingredients.
  5. Stir the batter until smooth and free of lumps.
  6. Prepare a steamer and bring water to a boil.
  7. Grease a round cake pan with a little vegetable oil.
  8. Pour the batter into the greased cake pan evenly.
  9. Place the cake pan in the steamer.
  10. Cover the steamer with a lid wrapped in a clean towel to catch condensation.
  11. Steam the cake over medium-high heat for about 30 minutes.
  12. Check doneness by inserting a toothpick; it should come out clean.
  13. Remove the cake from the steamer and let it cool slightly.
  14. Once cooled, remove the cake from the pan.
  15. Slice and serve the rice cake warm.
