Ingredients

Scale
  • 2 cups all-purpose flour (240 g)
  • 1 teaspoon baking soda (5 g)
  • 1/2 teaspoon baking powder (2 g)
  • 1/2 teaspoon salt (3 g)
  • 1 teaspoon ground cinnamon (2 g)
  • 1/2 teaspoon ground nutmeg (1 g)
  • 1/4 teaspoon ground cloves (0.5 g)
  • 1/4 teaspoon ground ginger (0.5 g)
  • 1 cup granulated sugar (200 g)
  • 1/2 cup packed light brown sugar (100 g)
  • 1/2 cup (120 ml) vegetable oil
  • 2 large eggs
  • 1 cup canned pumpkin puree (240 ml)
  • 1/2 cup plain yogurt (120 ml)
  • 1 teaspoon vanilla extract (5 ml)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan or line it with parchment paper.
  3. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
  4. In a large mixing bowl, beat the granulated sugar, brown sugar, and butter until creamy and smooth.
  5. Add the eggs to the sugar-butter mixture one at a time, beating well after each addition.
  6. Mix in the pumpkin puree, sour cream, and vanilla extract until combined.
  7. Gradually add the dry ingredients to the wet ingredients, stirring just until incorporated.
  8. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  9. Bake for 60 to 70 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  11. Slice and serve once fully cooled.

Notes

  • For a healthier twist, swap half of the all-purpose flour with whole wheat flour to boost fiber content.
  • Add a handful of chopped walnuts or pecans to the batter for a delightful crunch.
  • Adjust the spices to your liking by increasing cinnamon, nutmeg, cloves, and ginger for a bolder flavor profile.
