- 1 lb smoked sausage
- 1 large onion, chopped
- 5–6 russet potatoes, peeled and cubed
- 1/2 cup water
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder (optional)
- Vegetable oil
Instructions
- Cut the sausage into bite-sized pieces.
- Drizzle vegetable oil in a large skillet and sauté the sausage until golden brown.
- Meanwhile, peel and cube the potatoes into 3/4 inch pieces.
- In the same skillet, add the potatoes, chopped onion, 3-4 tablespoons vegetable oil, water, salt, pepper, and garlic powder (if using). Stir well.
- Once the water reaches a boil, reduce heat to medium-low and cover. Cook for 10 minutes.
- Remove the lid, increase heat to medium-high, and cook for another 10 minutes or until the potatoes are tender with crispy edges.
- Use a spatula to flip the sausage and potatoes to ensure they crisp up nicely without stirring too much.
- Serve immediately and enjoy!
