Ingredients
- Cornmeal
- All-purpose flour
- Buttermilk
- Sour cream
- Butter
- Eggs
- Baking powder
- Salt
- Sugar
Instructions
- Preheat oven to 375°F
- Mix dry ingredients in one bowl
- Combine wet ingredients in another bowl
- Mix wet and dry ingredients together until just combined
- Fill mini muffin tins
- Bake for 12-15 minutes for mini poppers
- Let cool slightly before serving
Notes
- Can be made in regular muffin tins (20-23 minutes baking time)
- For dairy-free version, use almond milk + apple cider vinegar, plant-based yogurt, and coconut oil
- Add jalapeños (2-3 tablespoons) for a spicy version
- Can be made as a loaf in 8×8-inch pan (25-30 minutes)
