- 2 boneless skinless chicken breasts
- 1 head romaine lettuce, chopped
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1/2 red onion, chopped
- 1 avocado, sliced
- 1/4 cup cilantro, chopped
- 1/2 cup tortilla strips
- Southwest seasoning
- Olive oil
- Salt and pepper
Instructions
- Season chicken with southwest spice mix
- Grill chicken until internal temperature reaches 165°F
- Chop and prepare all salad vegetables
- Slice grilled chicken
- Assemble salad with chicken and vegetables
