Delicious and crispy Southwest Egg Rolls filled with shredded chicken, black beans, and vibrant veggies, perfect as an appetizer or snack.


Ingredients

  • 2 cups shredded chicken
  • 1 cup black beans, drained and rinsed
  • 1 cup diced red bell peppers
  • 12 jalapenos, finely chopped
  • 1 cup shredded cheddar cheese
  • 2 teaspoons taco seasoning
  • 12 egg roll wrappers
  • Oil for frying
  • 1/2 cup sour cream
  • 1 avocado, mashed (for dip)

Instructions

  1. In a bowl, mix together shredded chicken, black beans, diced red bell peppers, jalapenos, and shredded cheddar cheese. Season with taco seasoning.
  2. Place a spoonful of the mixture into the center of an egg roll wrapper, rolling tightly and sealing the edges with a bit of water.
  3. Heat oil in a frying pan over medium heat. Fry the egg rolls until golden brown and crispy on all sides.
  4. Remove from oil and drain on paper towels.
  5. Serve warm with a dip made of sour cream and mashed avocado.

Notes

Consider customizing the filling with corn or different proteins. For a healthier option, bake instead of fry.
