Delicious and crispy Southwest Egg Rolls filled with shredded chicken, black beans, and vibrant veggies, perfect as an appetizer or snack.
Ingredients

- 2 cups shredded chicken
- 1 cup black beans, drained and rinsed
- 1 cup diced red bell peppers
- 1–2 jalapenos, finely chopped
- 1 cup shredded cheddar cheese
- 2 teaspoons taco seasoning
- 12 egg roll wrappers
- Oil for frying
- 1/2 cup sour cream
- 1 avocado, mashed (for dip)
Instructions
- In a bowl, mix together shredded chicken, black beans, diced red bell peppers, jalapenos, and shredded cheddar cheese. Season with taco seasoning.
- Place a spoonful of the mixture into the center of an egg roll wrapper, rolling tightly and sealing the edges with a bit of water.
- Heat oil in a frying pan over medium heat. Fry the egg rolls until golden brown and crispy on all sides.
- Remove from oil and drain on paper towels.
- Serve warm with a dip made of sour cream and mashed avocado.
Notes
Consider customizing the filling with corn or different proteins. For a healthier option, bake instead of fry.
