Description

Crispy and flavorful southwest eggrolls filled with black beans, corn, and spices, perfect as appetizers or snacks.


Ingredients

  • Eggroll wrappers
  • Black beans, drained and rinsed
  • Corn, drained
  • Bell peppers, finely chopped
  • Green onions, sliced
  • Cheese, shredded
  • Chili powder
  • Cumin
  • Olive oil for frying

Instructions

  1. In a mixing bowl, combine black beans, corn, bell peppers, green onions, and cheese.
  2. Sprinkle chili powder and cumin into the mixture and stir until combined.
  3. Lay an eggroll wrapper diagonally on a clean surface and spoon a portion of filling onto it.
  4. Fold the bottom corner over the filling, then fold the sides in and roll upward to close the eggroll.
  5. Seal with water to ensure it stays closed while frying.
  6. Heat olive oil in a pot or deep fryer over medium-high heat.
  7. Fry the eggrolls in batches until golden brown, about 3-4 minutes per side.
  8. Remove from oil and place on a paper towel-lined plate to drain excess oil.

Notes

For baking, preheat the oven to 400°F (200°C) and bake for 15-20 minutes, turning halfway through.
