Description
Crispy and flavorful southwest eggrolls filled with black beans, corn, and spices, perfect as appetizers or snacks.
Ingredients
- Eggroll wrappers
- Black beans, drained and rinsed
- Corn, drained
- Bell peppers, finely chopped
- Green onions, sliced
- Cheese, shredded
- Chili powder
- Cumin
- Olive oil for frying
Instructions
- In a mixing bowl, combine black beans, corn, bell peppers, green onions, and cheese.
- Sprinkle chili powder and cumin into the mixture and stir until combined.
- Lay an eggroll wrapper diagonally on a clean surface and spoon a portion of filling onto it.
- Fold the bottom corner over the filling, then fold the sides in and roll upward to close the eggroll.
- Seal with water to ensure it stays closed while frying.
- Heat olive oil in a pot or deep fryer over medium-high heat.
- Fry the eggrolls in batches until golden brown, about 3-4 minutes per side.
- Remove from oil and place on a paper towel-lined plate to drain excess oil.
Notes
For baking, preheat the oven to 400°F (200°C) and bake for 15-20 minutes, turning halfway through.
