- 4 large carrots, peeled and chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1-inch piece fresh ginger, grated
- 4 cups vegetable broth
- 1 can coconut milk
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a large pot over medium heat. Sauté the chopped onion and minced garlic until translucent.
- Add the grated ginger, chopped carrots, ground cumin, and ground coriander. Cook for another 5 minutes, stirring frequently.
- Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer until carrots are tender, about 20 minutes.
- Use an immersion blender to puree the soup until smooth, or carefully transfer mixture to a blender and blend in batches.
- Stir in the coconut milk and season with salt and pepper. Serve hot, garnished with fresh cilantro.
Notes
For added depth, consider enhancing with a dash of turmeric or cayenne pepper. For chunkier soup, blend only half. Adjust coconut milk for desired creaminess.
