Description

A warm and comforting soup that combines the sweetness of carrots with the zest of ginger, enhanced by spices and coconut milk.


Ingredients

  • 4 large carrots, peeled and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Sauté the chopped onion and minced garlic until translucent.
  2. Add the grated ginger, chopped carrots, ground cumin, and ground coriander. Cook for another 5 minutes, stirring frequently.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer until carrots are tender, about 20 minutes.
  4. Use an immersion blender to puree the soup until smooth, or carefully transfer mixture to a blender and blend in batches.
  5. Stir in the coconut milk and season with salt and pepper. Serve hot, garnished with fresh cilantro.

Notes

For added depth, consider enhancing with a dash of turmeric or cayenne pepper. For chunkier soup, blend only half. Adjust coconut milk for desired creaminess.
