- 1 block firm tofu
- 1/4 cup corn flour
- 2 tablespoons sesame oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 tablespoons red curry paste
- 1 tablespoon sriracha or hot sauce
- 1 cup coconut milk
- 2 tablespoons brown sugar
- 2 tablespoons light soy sauce
- Juice of 1 lemon or lime
Instructions
- Wrap the tofu in kitchen towels and place a small saucepan on top to drain excess water for 10-15 minutes. Pat dry and slice.
- Lightly coat the tofu slices with corn flour for a crisp texture.
- In a pan, heat sesame oil and sauté sliced onion, minced garlic, and grated ginger until fragrant.
- Add red curry paste and sriracha/hot sauce, stirring to combine.
- Pour in coconut milk, and add brown sugar, light soy sauce, and lemon/lime juice.
- Stir everything together and cook until heated through.
- Serve warm with desired garnishes.
Notes
Adjust the spiciness by varying the amount of sriracha. For added freshness, consider garnishing with herbs or lime wedges.
