Ingredients

  • 1 block firm tofu
  • 1/4 cup corn flour
  • 2 tablespoons sesame oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons red curry paste
  • 1 tablespoon sriracha or hot sauce
  • 1 cup coconut milk
  • 2 tablespoons brown sugar
  • 2 tablespoons light soy sauce
  • Juice of 1 lemon or lime

Instructions

  1. Wrap the tofu in kitchen towels and place a small saucepan on top to drain excess water for 10-15 minutes. Pat dry and slice.
  2. Lightly coat the tofu slices with corn flour for a crisp texture.
  3. In a pan, heat sesame oil and sauté sliced onion, minced garlic, and grated ginger until fragrant.
  4. Add red curry paste and sriracha/hot sauce, stirring to combine.
  5. Pour in coconut milk, and add brown sugar, light soy sauce, and lemon/lime juice.
  6. Stir everything together and cook until heated through.
  7. Serve warm with desired garnishes.

Notes

Adjust the spiciness by varying the amount of sriracha. For added freshness, consider garnishing with herbs or lime wedges.
