Ingredients

  • 3 tablespoons harissa paste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Assorted vegetables for grilling (bell peppers, zucchini, red onion)
  • 1 cup Greek yogurt
  • Fresh herbs for garnish

Instructions

  1. Combine harissa paste, olive oil, minced garlic, lemon juice and zest, and cumin in a bowl to create the marinade.
  2. Coat lamb chops with the marinade and refrigerate for at least 30 minutes, preferably 2-4 hours.
  3. Prepare vegetables by cutting into even pieces and threading onto skewers if desired.
  4. Preheat grill to medium-high heat.
  5. Grill lamb chops for 4-5 minutes per side for medium-rare, or to desired doneness.
  6. Grill vegetables until tender and slightly charred, about 10-15 minutes.
  7. Prepare yogurt sauce by mixing Greek yogurt with herbs and seasonings.
  8. Serve lamb chops and grilled vegetables with yogurt sauce on the side.

Notes

  • For a spicier dish, add more harissa paste to the marinade.
  • You can substitute lamb chops with lamb steaks or other cuts if preferred.
  • The yogurt sauce can be made ahead and refrigerated until serving time.
